So, as Colin Spencer asks, why did British food "decline so direly that it became a world-wide joke, and how is it now climbing back into eminence?" This delectable volume traces the rich variety of foods that are inescapably British--and the thousand years of history behind them.

Colin Spencer's masterful and witty account of Britain's culinary heritage explores what has influenced and changed eating in Britain--from the Black Death, the Enclosures, the Reformation, the Age of Exploration, the Industrial Revolution, and the rise of capitalism to present-day threats posed by globalization, including factory farming, corporate control of food supplies, and the pervasiveness of prepackaged and fast foods. He situates the beginning of the decline in British cuisine in the Victorian age, when various social, historical, and economic factors--an emphasis on appearances, a worship of French cuisine, the rise of Nonconformism, which saw any pleasure as a sin, the alienation from rural life found in burgeoning towns, the rise and affluence of the new bourgeoisie, and much else--created a fear that simple cooking was vulgar. The Victorians also harbored suspicions that raw foods were harmful, encouraged by the publication of a key cookbook of the period, Mrs. Beeton's Book of Household Management.

However, twenty-first century British cooking is experiencing a glorious resurgence, fueled by television gurus and innovative restaurants with firm roots in the British tradition. More than that, however, Broomfield offers an introduction to the world of everyday dining, food preparation, and nutrition during one of the most interesting periods of English history. Food procurement, kitchen duties, and dining conventions were almost always dictated by one's socioeconomic status and one's gender, but questions still remain. Who was most likely to dine out? Who was most likely to be in charge of the family flatware and fine china? Who washed the dishes? Who could afford a fine piece of meat once a week, once a month, or never? How much did one's profession dictate which meal times were observed and when? Here we find roasts, stews, jellies and custards alongside dishes that call for highly prized spices or animals such as curlews and porpoises. This 1780 transcription, from the manuscript then belonging to Gustavus Brander and now in the British Library, was made by the Anglican clergyman and antiquary Samuel Pegge (1704-96). Ordained in 1730 and elected a fellow of the Society of Antiquaries in 1751, Pegge briefly discusses in his preface the history of cooking since antiquity, while his annotations to the text elucidate the medieval vocabulary. Although whisky is an umbrella term that includes everything from Bourbon to Irish and back again, it is most synonymous with Scotch and its success as a brand. But, how did an obscure drink from the far reaches of Europe rise to become a worldwide phenomenon? That's the first question asked in this book. Secondly, most decent bars and stores have a wide range of Scotches, but what do their names actually mean? It's not something we really think about, but it lies rooted in the social history of Scotland. A large proportion of these derive from farm names, which is understandable since whisky was mostly an agricultural by-product. The names, in turn, reflect the various languages historically spoken across the country. Whisky gives us a glimpse into the world of our ancestors and allows us to see that world through their eyes. Southover's reprint carries a facsimile of the original text from Cambridge University Library, with a modern interpretation facing each page. The book explains in detail the intricate rituals of setting and waiting at table, how to prepare the dishes to be served and exactly what was eaten at different times of the year, and was written as an instruction manual for well-born boys as part of their early education. It also tells the reader how to carve meat, fowls and fish and to sauce each dish with its appropriate accompaniments, some of them very sophisticated. A description is included of the chamberlain's duties in his lord's chamber, dressing him and preparing him for church, and for bed. There is an interesting section on the order of precedence on feast days and great occasions. Peter Brears writes an Introduction and provides a glossary and drawings to explain the complicated rituals, including the arrangement of cloths before and at the end of meals. His research into traditional domestic life, combined with extensive experience of cooking authentic meals in historic properties, has given him a unique knowledge of English food history. He was for twenty years director of York Castle as well as of Leeds City Museums. The book features a collection of political cartoons that were created by a contemporary London cartoonist during the time of the Boston Port Bill. The Boston Port Bill was a law passed by the British Parliament in 1774 that closed the port of Boston until the colonists paid for the tea that was destroyed during the Boston Tea Party. The cartoons in the book provide a unique perspective on the events of the time and offer insight into the political climate in both America and Britain. Thanks to artists like Hans Holbein the Younger, we feel we have a definite idea of the characters of these famous kings and queens: the miserly Henry VII, the six-times married tyrant Henry VIII, the boy king Edward VI, the devout matriarch Mary I and the virgin queen Elizabeth I. Yet, iconic as they are, when it comes to Tudor art, portraits - and rulers - are far from the whole story.

In the sixteenth century, images and objects took on powerful new roles, as more people than ever before used them to shape their worlds. Monarchs, archbishops and courtiers continued to commission artworks in a variety of media, to convey messages and create a record of themselves as office-holders and individuals. But in this period, the 'middling sort', professional men and women, were also gaining status, wealth and influence. They wanted to promote themselves too, and used art and a dazzling array of objects to do so.

In this unique and beautiful book, Christina Faraday uses art - paintings, sculpture, prints, tapestries, embroideries, clothes, jewels and household objects - to investigate every facet of the period. International networks were already shaping prehistoric art and by 1,000 CE artists working in Britain and Ireland were using lapis lazuli from Afghanistan, walrus tusks from Greenland, garnets from India and elephant ivory from Africa. The Romans, Anglo-Saxons, Vikings and Normans introduced new styles from overseas, as did later European artists, attracted by the wealth of royal courts. Architects inhabiting this world, or designing for it, were creating new and hybrid forms of Victorian architecture, continuously, in multiple locations. New efficiencies brought by technological advancements such as steam-powered locomotion enabled the Victorian building industry to revolutionise in terms of scale, precision, and variety. As many of the buildings examined here reveal, at the foundation of this revolution was a significant transformation in the supply and conversion of energy. Materials used in construction often come from far away and were procured under increasingly mechanised conditions, entailing the consumption of fossil-fuels in huge, unprecedented quantities. Markets for these materials also multiplied during the period, with companies producing and exporting products as diverse as cast-iron, encaustic tiles, and stained glass in large quantities. Even whole buildings were packed and shipped abroad.

Victorian Architecture presents a new and refreshing overview of nineteenth- and early twentieth-century architecture in Britain and the wider British world. Thematically structured, it highlights concerns fundamental to how Victorians experienced their world, including urbanism, industry, government, faith, empire, modernity, social order, family, collecting, and consumerism. In emphasising important concepts in building design and culture, it thus connects the understanding of architecture to its wider social, political, and economic contexts. A key feature of the book is the way it situates British architecture in its extended global geographies, with the Victorian built environment seen as encompassing Britain's colonial expansion. As people and ideas were increasingly mobile during this period, themes such as speed and movement are brought to the fore. British architects were designing buildings not just in the British Isles, but much farther afield, in lands as far apart as Barbados and Bombay, Newfoundland and New South Wales. Concise and visually attractive, Victorian Architecture is aimed at a student and general-reader audience, as well as providing a useful reference point for professional scholars.
Author Biography

G.A. John Everett Millais, Dante Gabriel Rossetti, and William Holman Hunt founded The Pre-Raphaelite Brotherhood as a challenge to the contemporary academic style. Their pursuit of truth to nature opened up a new aesthetic world of flame-haired "stunners," mystical gardens, religious symbolism, and erotic intensity. Their canvases radiated with light, color, and beauty. The Pre-Raphaelites helped to define late Victorian culture, inspiring the Arts and Crafts movement, and establishing a genre that continues to enchant viewers more than a century and a half later. From their scandalous romances to their profound meditations on love and death, the Pre-Raphaelites lived as passionately as they painted. Yet their enduring popularity was not always assured. However, the Christian cause quickly became corrupted when it laid siege to and sacked the Christian city of Zara in Croatia (1202) before advancing on and sacking Byzantine Constantinople and partitioning the empire. Only a handful of the crusaders reached the Holy Land. The Fifth Crusade (1217-21) also attempted to subdue Egypt. The port city of Damietta, at the mouth of the Nile was attacked and taken as a preliminary of an advance on Acre. In July of 1221 the crusaders marched on Cairo where they engaged Muslim forces at Mansurah, were decisively defeated, compelled to surrender and depart from Egypt having achieved nothing. Seven years later the Sixth Crusade began and was a partial diplomatic success which enabled the Kingdom of Jerusalem to restore much of its former influence. The Seventh (1248-54) and Eighth Crusades (1270), made notable by the involvement of King Louis IX of France not only once again failed in their objectives, but resulted in the death of the king. The Ninth Crusade, led by the future king of England, Edward I, led to a ten year truce with the Mamluks before the fall of Acre, the expulsion of permanent European powers and the end of the time of Crusaders.

Leonaur editions are newly typeset and are not facsimiles; each title is available in softcover and hardback with dustjacket.

Number of Pages: 204

Dimensions: 0.63 x 8.5 x 5.5 IN

Publication Date: September 26, 2022

Report copyright infringement

by Yannis Hadjinicolaou (Author)

A beautifully illustrated tour of the visual culture of medieval falconry in Europe and beyond.

Medieval falconry was not just about hunting; the practice also signified sovereignty, power, and diplomacy. Between the beginning of the eighteenth century and the late twentieth, Shakespeare became entrenched as the English national poet. Over the same period, the monarchy sought repeatedly to demonstrate its centrality to British nationhood. By way of close analysis of a selection of objects from the Royal Collection, this volume argues that the royal family and the Shakespearean afterlife were far more closely interwoven than has previously been realized.

The chapters map the mutual development over time of the relationship between members of the British royal family and Shakespeare, demonstrating the extent to which each has gained sustained value from association with the other and showing how members of the royal family have individually and collectively constructed their identities and performed their roles by way of Shakespearean models. Each chapter is inspired by an object in (or formerly in) the Royal Collection and explores two interconnected questions: what has Shakespeare done for the royal family, and what has the royal family done for Shakespeare? The chapters range across the fields of art, theatre history, literary criticism, literary history, court studies and cultural history, showing how the shared history of Shakespeare and the royal family has been cultivated across media and across disciplines.
Author Biography

Sally Barnden, Lecturer in Literature and Visual Culture, Swansea University, Gordon McMullan, Professor of English, King's College London, Kate Retford, Professor of History of Art and Head of the School of Historical Studies, Birkbeck, University of London, Kirsten Tambling, Previously postdoctoral research associate for 'Shakespeare in the Royal Collection', and subsequently Associate Lecturer on the Curating the Art Museum programme, Courtauld Institute of Art

Sally Barnden (BA York, MA, and PhD King's College London) is a Lecturer in Literature and Visual Culture at Swansea University, and was a postdoctoral research associate for 'Shakespeare in the Royal Collection.'
