Molokhia: The Royal Superfood - Paperback

by Basel Asmar (Author)

Molokhia. Jute leaf. Saluyot. Ewedu. Lalo. The names are many-but the ingredient is one. Though widely loved across the Middle East, North Africa, West Africa, and parts of Asia, this versatile leafy green remains relatively unknown in much of the Western world. Locally essential but globally unfamiliar, molokhia is one of the world's great unsung superfoods. This book is not a cookbook. It is an invitation to discover and celebrate a cherished ingredient that has nourished generations from the Levant to Lagos, from Cairo to Kyoto. While Western tables grow increasingly adventurous, molokhia is poised, waiting in the wings, to take its rightful place in the global culinary spotlight. In this brief but eye-opening guide, this book explores molokhia's rich cultural significance, nutritional value, and unexpected global footprint. Part I offers a simple introduction to the plant itself; Part II traces its journey across continents, revealing how people around the world have made it their own-each convinced it is a local tradition, unaware of its appeal elsewhere. Whether you're new to the world of molokhia or grew up slurping it every Friday, this book invites you to see this humble green leaf in a whole new light.
